As we move through the holiday season, we begin spending more time indoors, visiting with friends and celebrating with incredible food. Dishes this time of year tend to be a bit heavier than our delicate systems are used to. This may leave you bloated, tired and feeling bogged down. Post-holiday, add some green detox soups into your routine to give your body and digestive system a break. Incorporate seasonal veggies like chard, kale, brussels sprouts, fennel, beet greens, turnip greens, spinach, parsley and fresh herbs.
These nutrient-dense veggies, especially parsley and spinach, will give your system a cleansing boost and get you back to feeling your best. Parsley is a known diuretic and immune system booster thanks to the vitamin A, C, K and Bs packed inside. Spinach is an excellent source of vitamins E, A, C and K, along with minerals and protein. Adding these soups to holiday season will leave you energized, fueled and ready to take on the new year.

1 bunch of asparagus
1 handful of spinach
1 handful of kale, chopped
1 zucchini, sliced into thin moons
A pinch or two of sea salt
2 Tablespoons of ghee
2-4 cups of vegetable or bone broth (depending on how thick you want soup)
Heat the ghee in a pan. Slice all greens and sauté them for about 8 minutes – start with harder produce, slowly adding softer produce
In a separate soup pot, heat up the broth and then pour the green veggies into the pot to cook fully
Once softened – let cool briefly
Blend with a hand blender or high speed blender until smooth & enjoy!
