Cacao + Coconut Energy Bites

It’s August, and many of you may be in the midst of your summer travels. For some, the hardest part about traveling is trying to eat healthy, especially if you have food allergies and are prone to tummy troubles. Because I have IBS, I always make sure to bring along healthy food that I can eat on a long road trip or flight. These energy bites are a great travel companion, packed with healthy fats and plenty of fiber. The best part about these is that they’re no bake. I rolled half the energy bites in cacao powder and half in desiccated coconut. Feel free to roll the whole lot in either or–I know not everyone is a fan of coconut! And, if you prefer a sweeter taste, you can add more dates (or less if you want to reduce the sugar.) The first time I made these I only used about three dates which wasn’t quite enough, so they just tasted like unsweetened cacao bites. I used leftover almond pulp from making homemade almond milk, but you can also use almond flour in lieu of the pulp.


1 cup almond meal/flour

5-7 dates, pitted and chopped

1/2 cup walnuts

1/4 cup cacao powder, plus more for coating (about 1/4 cup)

2 tablespoons chia seeds

1/2 teaspoon vanilla extract

2 tablespoons coconut oil

1/8-1/4 teaspoon salt

1/4 cup desiccated coconut for coating (optional)


1. Place all ingredients into a food processor (save the optional desiccated coconut) and pulse until ingredients are combined.

2. Using your hands, roll the mixture into individual, one-inch balls.

3. Place 1/4 cacao powder and 1/4 cup desiccated coconut into separate bowls. Roll half of the energy bites into the cacao powder and half into the desiccated coconut until they are evenly coated.

4. Store in the refrigerator for up to four days.
